Healthy breakfast pancakes

This recipe is super easy and perfect for the weekends. Make the batter in a blender to speed the process up even further.

(makes 4)


60g rolled oats

½ teaspoon baking powder

150g yoghurt (0% Total Greek yoghurt works well)

1 ripe banana (the riper your banana, the sweeter your pancakes will be)

1 egg

½ teaspoon cinnamon

Berries and honey to serve


Place all ingredients except the berries and honey into a blender; blend until smooth. You may need to add a teaspoon or two of  milk if batter is too thick. Set batter aside to thicken up for a few minutes.

Lightly coat a large nonstick pan with oil  and heat over medium low heat. Drop batter by 1/4 cup into a pan. Cook until bubbles appear on top. Flip cakes and cook until golden brown on each side. Add berries and honey to finish.
